  Pancakes. They're not just for breakfast anymore!   In a mixing bowl, combine 2 cups of flour, 1 cup of milk, one egg, and a pinch of salt. In a frying pan over medium-high heat, pour oil to coat the bottom of the pan. Use a spoon to pour batter on the hot pan for each pancake. Cook until tiny bubbles form on top and then flip with a spatula to cook both sides until golden brown. Preparing pancakes for the week  is an excellent idea if you're looking to save time and money.   1. Combine pancake ingredients in one bowl, allow it to rest for five minutes, and then mix again. Add flour gradually while mixing, and then add finely chopped or grated vegetables and shredded cheese if desired. 2. Fill a microwave-safe container with batter; cover with plastic wrap; poke air holes in the top of the wrap; place in microwave oven heated at 100% power (high) for 2 minutes or until batter puffs up like a balloon (covering should appear dry on top).
